My name is Gennie Cooley. I have been in Restaurant Management for over 20 years and taken the ServSafe class many times. This last time, I took the class with Carmen and scored higher than I ever have with at 92%, whoo hoo! I must attribute this to her style of teaching, use of humor, lots of interaction and her practical knowledge from being a health inspector. And boy does she have some stories!!! Carmen’s Food Manager’s Class on 4/20/15 was nothing like I thought it was going to be. We started off with an awesome breakfast, then Carmen laid out the agenda for the day and it was clear from the beginning that we would be moving at a fast pace and preparing to do well on our exams. Carmen had short stories from “the real world” that helped emphasize the importance of what we were learning. We had an awesome lunch and plenty of breaks. Carmen was very easy to understand, her visual materials were up to date and she quickly moved through the visuals and was very familiar with them, so she was able to refer back to them when students had questions. I’m not going to lie…the exam was tough, but I wasn’t asked about anything we hadn’t covered in class, and the practice test exercise Carmen lead was fun, tested us as individuals and I think really prepared me for the exam. I recommend that Managers looking for a good experience in learning about proper food handling take this class. It was a class act!”
